So this is dangerous alright. Fantastically, brainwashingly dangerous. Because, for one, it fools you into thinking that i'm a cheese hater. So you read on carefreeingly, unaware of what lies ahead. Then, for two, it leads you to the Laughing Cow. THE one. The religion leader. I was suck right into its cult. After several years in darkness as a cheese hater I have, today, found the way.
Heck, I used to take off the cheese on my pizza slices (still do. But don't worry, I'm on my way to Enlightenment).

the CHILLED BLUEBERRY CHEESECAKE
The Laughing Cow trained it well. See that velvety creaminess? The quick, inviting flash of that slinky, buttery graham crust? DON'T TRY TO COVER YOUR EYES! It'll still get you. The fruity scent of its semi-sweet, semi-tart blueberries will entrance your olfactory cells and aurify your saliva into berry juice.
Isn't that a great feeling?
Luckily for you and for me, I've tamed and domesticated one of those babies and it is now peacefully napping in the warmth of my belly.
Chilled Blueberry Cheesecake
Adapted from Epicurious
1 graham cracker crust (
I used Honey Maid)
Blueberry Cream Cheese Filling:
1/4 cup water
1 tablespoon unflavored gelatin (measured from 2 envelopes)
12 ounces Philadelphia-brand cream cheese, room temperature (
I used Laughing Cow)
1 cup heavy whipping cream
1 cup sugar (
2/3 cup for me. I figured that the berries were already sweet enough on their own)1 tablespoon fresh lemon juice (
Lime juice here. I prefer its subtle scent to lemons')
3 cups fresh blueberries (
I took frozen ones and thawed them)
Filling:
Pour 1/4 cup water into small saucepan; sprinkle gelatin over until it fluffs up into a nice, semi-white translucid mass. Let stand 10 minutes. Stir over very low heat just until gelatin dissolves. Set aside.
Blend cream cheese, cream, sugar, and lemon juice in processor until smooth. Add berries; puree until smooth (some blueberry bits will remain). With machine running, add warm gelatin mixture through feed tube and blend well. Pour filling into crust. (If you want to add chocolate swirls like I did, wait 5-10 minutes for the mixture to slightly cool down before twirling the melted chocolate in. If the filling is still too warm the chocolate will sink to the bottom) Cover; chill overnight. (Can be made 2 days ahead. Keep chilled.) Run knife around pan sides to loosen cake. Release pan sides. Transfer to platter.
